I would employ an attorney to draft the release language for you. In today's society, people will sue you for just about anything. You want to be as well-protected as possible in case there is a mishap and a dog or person is injured or killed (so, not only making sure the release language is legally sound, but also carrying an appropriate amount of liability insurance for your business). To me, it is worth the expenditure to have something professionally done that is specific to your business in instances like this.
References :
You should let them play as much as they want but be Mom and step in when one gets too rough. This is how they socialize with other dogs, just try to keep them from chewing on each other too much, and give them plenty of attention. It's not a hard thing to do, but try to make sure they are wanting to play with you too. They will, with the attention they need, become BFF's and size won't matter that much. What's wrong with mixed breeds? They make some of the best dogs as they are not as likely to have genetic problems that pure breeds have. I volunteer at my city animal shelter and we get mixed dogs , pure breeds and assorted puppies all the time. They are fine, if raised using your brain. Over 3000 dogs came through the shelter last year, and almost all were adopted or sent to rescues,Mixed and Pure.
References :
neapolitans are similar but without the extremes being recorded like the english
References :
I have successfully raised two litter mate Rotties but I was a stay at home mom and had time to train each pup individually, the below article boasts pros and cons, but as much as we sugar-coat it we must admit it is not an easy ordeal and the average dog owner with a full-time job cannot possibly endure in it with success.
References :
http://alexadry.hubpages.com/hub/Pros-and-Cons-of-Raising-Two-Litter-Mate-Dogs

English Mastiffs average 150 - 200+ lbs. Neapolitan Mastiffs can be 165 - 200 lbs. American Mastiffs are 160 - 200+ lbs. I would say both the English Mastiff and American Mastiff tie for heaviest breed.
